Slightly Lightened up Meatloaf Patties

  1. In a large bowl, combine meat, breadcrumbs, 1/8 cup milk, egg, worcestershire, tomato paste, bell pepper, garlic and scallions.
  2. season with salt and pepper.
  3. Mix gently but do not overwork.
  4. Preheat a large nonstick skillet over medium-high heat and add vegetable oil.
  5. Shape meat into 4 patties and cook for 7 minutes on each side.
  6. Remove meatloaf patties and keep warm.
  7. reduce heat to medium and add butter, onions and red pepper flakes.
  8. Cook onions until soft and then sprinkle with flour.
  9. Cook for 1 minute.
  10. Add chicken stock and 1/4 cup skim milk.
  11. Bring to a simmer.
  12. If too thick, add more chicken stock.
  13. Season with salt and pepper to taste.
  14. Slice patties and serve with the gravy.
