Caribbean Rice Pudding
- 34 cup uncooked rice (I use Jasime)
- 12 teaspoon salt
- 1 12 cups water
- 4 cups half-and-half
- 12 cup coconut milk
- 12 cup spiced rum
- 12 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla
- 12 cup white raisins
- In saucepan, add water, salt, and rice.
- Bring to boil in saucepan, cover and lower heat to low simmer for approximately 8 or 9 minutes.
- Add 3 cups of half & half, rum, coconut milk, and sugar.
- Turn heat up till mixture begins to boil, then reduce to low simmer uncovered for approximately 10 minutes, stirring often.
- Meanwhile, in small bowl, whisk together remaining 1 cup half & half, egg, and vanilla.
- Pour slowly into the rice mixture, whisking quickly to prevent eggs from cooking too fast.
- Stir in raisins.
- Continue to cook for another 2 minutes.
- Remove from heat.
- Serve warm or chilled.
- Try topping it with chopped mangos!
