Banana Chocolate Whole Wheat Bread
- 13 cup milk low-fat
- 1 teaspoon lemon juice
- 1 3/4 cups whole wheat flour
- 1/2 cup cocoa powder unsweetened
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon ground
- 1/2 teaspoon nutmeg ground
- 1/2 teaspoon salt
- 2 large eggs
- 3/4 cup honey or sugar
- 3 large bananas ripe and mashed
- 1 tablespoon canola oil or olive oil, or any vegetable oil
- 1 teaspoon vanilla extract
- Preheat oven to 375F (190C).
- Butter and flour a 9x5 inch loaf pan and set aside.
- Add the milk and lemon juice in a glass measuring cup, and stir well, allow to stand until curdled, about 30 seconds.
- Add the whole wheat flour, cocoa powder, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl, whisk until well combined.
- Set aside.
- Beat the eggs and sugar in a large bowl with an electric mixer until smooth.
- Beat in the mashed bananas, the milk mixture, vegetable oil, and vanilla extract until almost smooth.
- Pour in the flour mixture, beat just until all the ingredients are incorporated.
- Do not over beat.
- Or you can use a spatula to mix.
- Spread the batter into the prepared loaf pan.
- Bake until a toothpick inserted into the center comes out clean, about 1 hour.
- Cool in the pan on a wire rack for 10 minutes.
- Transfer on the wire rack and let cool completely.
