Mother's Yeast Rolls Recipe
- 2/3 c. shortening
- 2 tbsp. sugar
- 1 teaspoon salt
- 1 c. mashed potatoes (unseasoned)
- 1 c. scalded lowfat milk
- 2 pkg. dry yeast
- 1/2 c. hot water
- 2 Large eggs, well beaten
- 4-5 c. plain flour
- Mix first 4 ingredients and pour the scalded lowfat milk over it all and mix.
- When cold, add in the rest of the ingredients and mix.
- Knead.
- Put back in greased bowl; cover.
- Place in hot place to rise.
- Punch down.
- Put back in refrigerator.
- When ready to serve, roll out rolls and cut with a biscuit cutter.
- Place in a hot place to rise and bake in a warm oven for 10-15 min.
- Yield: 24-36 average size rolls.
