Swiss chard & white bean soup
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1 small onion, chopped
- 1 medium carrot, sliced
- 1 bunch chard, or kale, or broccoli rabe
- 1 can 15 oz white kidney beans
- 1 quart vege broth
- 1 parmesan cheese
- heat oil in med pot, add garlic, onion, carrot, until softened
- add chard, beans, broth
- cover and cook until very hot
- serve with cheese
