Tomato, Basil, and Brie Sauce for Pasta
- 7 tomatoes, peeled and cubed
- 12 lb brie cheese, cubed
- 14 cup olive oil
- 1 cup basil, chopped
- 4 garlic cloves, minced
- 12 teaspoon oregano
- 1 tablespoon red wine vinegar
- salt
- pepper
- Combine all ingredients on the stove.
- Simmer on low heat.
- Once it is warm it's ready, the longer it simmers the better it tastes.
- Serve over pasta.
- I prefer it with bowtie.
