Peanut Butter Whoopie Pies

  1. Preheat oven to 350F Coat 2 baking sheets with cooking spray.
  2. On medium-high speed, beat cake mix, eggs, pudding and cocoa until dough forms.
  3. Using moistened hands or hands coated with cooking spray, divide dough into 12 equal pieces, shape into balls.
  4. Arrange 3" apart on baking sheets.
  5. Bake 12-15 minutes or until springy when touched.
  6. Cool 2 minutes.
  7. Transfer to racks.
  8. Cool completely.
  9. Meanwhile, on medium-high speed, beat sugar, fluff, butter and peanut butter until light and fluffy (2 minutes).
  10. Spread over flat sides of 6 cookies, dividing evenly.
  11. Top with remaining cookies, flat side down.
  12. Roll sides in sprinkles.
