Flaming Fruit-Filled Pineapple (microwave)

  1. Cut pineapple including crown in half lengthwise.
  2. Cut out fruit leaving shell intact.
  3. Remove core and cut fruit into chunks.
  4. Toss pineapple with remaining ingredients EXCEPT the rum.
  5. Place pineapple shells on micro safe platter or dish.
  6. Fill with fruit mixture.
  7. Cover with wax paper, and micro on high for 10-12 minutes, check for pineapple doneness it needs to be warm enough to develop flavor in order to be flamed.
  8. If probe is available set to 120 degrees.
  9. Remove from microwave when done.
  10. Measure rum into glass measuring cup.
  11. Micro at 15 sseconds.
  12. Remove 1 metal tablespoonful.
  13. Pour rest of rum over pineapple.
  14. Ignite the rum in the spoon and pour over the pineapple to flame.
