Maris Oatmeal Cookies
- 1 cup (2 sticks) salted butter, room temperature
- 1 cup brown sugar, packed
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups sifted all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups old-fashioned oatmeal, such as Quaker
- 1 cup chopped pecans
- 1 cup grated coconut
- Preheat the oven to 375F.
- In an electric mixer, cream the butter and the sugars.
- Add the eggs and vanilla and beat well.
- Sift together the flour, baking soda, baking powder, and salt, and add to the butter mixture.
- Add the oatmeal, nuts, and coconut.
- Drop the dough by teaspoonfuls onto an ungreased baking sheet 2 inches apart.
- Bake for 10 minutes, or until light brown.
- Cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.
- The cookies will be chewy.
- Its the coconut in these cookies that makes them really good!
