Pork Satay
- 1 lb boneless pork loin
- 2 tablespoons smooth peanut butter
- 2 tablespoons soy sauce
- 13 cup minced onion
- 1 garlic clove, minced
- 1 tablespoon fresh limes or 1 tablespoon lemon juice
- 2 teaspoons brown sugar
- 1 dash hot pepper sauce
- 1 tablespoon vegetable oil
- Trim pork and cut meat into 1/2 inch cubes.
- In a medium bowl, combine peanut butter, soy sauce, onion, garlic, lime juice, brown sugar, hot sauce and oil.
- Mix until well blended.
- Add pork and toss to coat.
- Marinate 2 hours at room temperature or overnight in the refrigerator.
- Soak bamboo skewers in water for 30 minutes.
- Thread 3 pieces pork onto each skewer.
- Broil satays 4 inches from heat, turning occasionally, until nicely browned outside, 8-10 minutes.
