Cape Shark In Tomato And Citrus Recipe
- 1 lb cape shark (dogfish) cut into 4 pcs
- 1 tsp salt
- 1/4 c. extra virgin olive oil
- 3 x garlic cloves crushed
- 8 sprg coriander
- 6 Tbsp. pureed tomato
- 2 Tbsp. fresh citrus (lemon or possibly lime) juice
- 1 tsp dry red chili peppers
- 1/3 c. water
- Rub salt well onto fish pcs.
- Use a small amount of oil to coat a shallow baking dish and place fish in baking dish.
- Heat the remaining oil in a skillet and gently fry the garlic.
- Add in the coriander, followed in a few min by the pureed tomato and citrus juice.
- Stir to mix ingredients together.
- Pour tomato-citrus sauce over the fish.
- Sprinkle the chili peppers over the fish and add in water to the baking dish.
- Bake in an oven preheated to 425 degrees for 20 to 25 min.
- This recipe yields 4 servings.
