Chicken mulligatawny soup
- 6 chicken thighs
- 1/2 cup long grain rice
- 2 clove chopped garlic
- 1 tbsp madras curry
- 2 tsp minced ginger
- 1 1/2 tsp salt
- 1/2 tsp saffron
- 1/2 small cinnamin stick
- 2 cup apple juice
- 1/2 cup coconut milk
- slice chicken into strips.
- combine with rice, garlic, curry paste, ginger, salt, saffron abd cinnamin sticl in slow cooker.
- pour 5 cups water in and stir.
- cook on low until chicken is tender.
- stir in apple juice, coconut milk and green onion.
- remove cinnamin before serving.
- serve with garnish
