Parmesan Zucchini Sticks
- 3 medium zucchini
- 12 cup grated parmesan cheese
- 12 cup fine dry breadcrumb
- 12 teaspoon garlic salt
- 12 teaspoon black pepper
- 13 cup olive oil
- Trim zucchini then cut into 3 inch lengths.
- Quarter each piece lengthwise.
- In a medium bowl combine cheese, bread crumbs, garlic salt, and pepper.
- Toss to blend well.
- Pour oil into a shallow dish.
- Dip zucchini pieces in oil then roll in cheese mixture to coat.
- Arrange in a single layer on a microwave safe plate.
- Microwave on high for 5 minutes or until crisp-tender.
