Sauteed Artichokes With Apple Cider Sauce

  1. Heat 1 tbs vegetable oil in a deep skillet.
  2. Add the onion or shallots and the garlic.
  3. Fry a few minutes, until translucent.
  4. Add the apple and celery.
  5. Cook until celery is translucent.
  6. Add the mustard and the cider and stir to combine.
  7. Cook 5 minutes to blend the flavors.
  8. Strain the sauce through a coarse colander.
  9. Set aside.
  10. Meanwhile, in a different skillet heat the remaining oil and sautee the halved artichokes.
  11. Cook for a few minutes and place on a serving platter.
  12. Pour the strained sauce over them and serve warm.
