Sweet and Sour Chicken

  1. Preheat oven to 350 degrees (175 C.).
  2. Mix together Russian dressing, Lipton soup mix, and apricot jam in a large casserole dish.
  3. (I usually like to use oval dishes--they seem to work best.)
  4. Add chicken breasts.
  5. Cover and cook for 45 minutes to one hour.
  6. Stir about every 15 to 20 minutes.
  7. Serve over white rice.
