Molded Corned Beef Salad Recipe
- 1 lg. pkg. lemon Jello
- 1/2 c. cool water
- 1 can corned beef
- 1 c. Miracle Whip
- 1 green pepper, finely cut
- 1-1/2 c. V - 8 juice
- 2 hard boiled Large eggs, minced
- 1-1/2 c. celery, finely cut
- 1/2 sm. onion, finely cut
- Dissolve Jello in boiling warm V - 8 juice.
- Add in cool water.
- Break the corned beef into small pcs and add in to the Jello with the rest of the ingredients.
- Mix well and pour into an 8 x 13 inch loaf pan that has been sprayed with Pam.
- Chill till hard.
- Best to make the day before serving.
- Serve on lettuce leaves.
- Makes 10 to 12 servings.
