ARROZ CHAUFA De POLLO -- Peruvian Chicken Fried Rice
- 600 gr white rice
- 300 gr chicken breast fillets, diced
- 90 gr red paprika/morron, diced small
- 100 gr onions, sliced lengthwise
- 2 tsp ginger, finely chopped
- 1 leek, thinly sliced
- 3 tbsp sweet soy sauce
- 2 tsp salty soy sauce
- 1 tsp sesame oil
- to taste Salt and pepper
- 3 eggs
- 3 tbsp evaporated milk
- 4 shallots, thinly sliced and fried
- 2 tbsp celery, chopped
- 120 gr fried peas
- Beat the eggs with milk and a little salt (1 egg + 1 tbsp milk), fry it and then roll.
- Remove and cut into pieces.
- Saute onion and ginger until fragrant, put in chicken pieces.
- Cook until chicken changes color.
- Add rice, red paprika and leek.
- Mix well.
- Add soy sauce, vitsin, salt and pepper.
- Stir again, add sesame oil shortly before turning off the flame.
- Place the fried rice in a serving dish, sprinkle with fried shallots and celery.
- Serve with scrambled eggs (omelets) and fried peas.
