Mama T's Green Forest Roast
- 3 lbs roast
- 6 potatoes
- 1 lb carrot
- 2 onions
- salt
- pepper
- Important: Start this roast the night before you want to eat it!
- Season the roast with salt and pepper.
- Place roast in an ovenproof pot or baking dish with a lid.
- Cut up vegetables and place on top of roast.
- Put the lid on the pot and place it in a 225 degree oven.
- In the morning, turn your oven off and then right back to 225 degrees (ovens often have an automatic shutoff after they have been left on for 12 hours).
- Do not open the oven door and peek!
- Let the roast cook until you are ready to eat in the afternoon.
- Note: Do not add water or other liquid to this roast.
- You will be amazed at how much juice you will have in the pot!
