SALMON SALAD
- 1 (14.75oz ) can salmon drained
- 2 tbsp Cilantro Avocado yogurt dressing (I used Bolthouse Farms)
- 2 tbsp sriracha mayo
- 2 Small clove garlic, minced
- 4 Drained oil - packed sun-dried tomatoes, finely chopped
- 6 pitted manzanilla olives, finely chopped
- 3 Green onion, finely chopped
- 2 tsp rice vinegar
- 1 salt and freshly ground black pepper (pinch )
- 2 ripe but firm avocado, halved,pit removed
- 2 tbsp Almonds toasted (optional )
- In a bowl, combine salmon, dressing, mayo,garlic, sun-dried tomatoes, olives, green onions and vinegar mix.
- Add a little water to adjust texture, if necessary.
- Season with salt and pepper.
- Spoon salmon salad into avocado halves, sprinkle with toasted almonds, if desired, and serve.
