Homemade Rolls
- 1 c. hot milk
- 1 c. boiling water
- 1/2 c. sugar
- 1 Tbsp. salt
- 2 Tbsp. shortening
- 2 pkg. dry yeast
- 1/4 c. warm water
- 2 eggs, beaten
- 7 to 8 c. all-purpose flour
- melted butter or margarine
- Combine milk, boiling water, sugar, salt and shortening; cool to lukewarm.
- Dissolve yeast in warm water.
- Add to milk mixture with eggs.
- Mix well.
- Add 4 cups of flour and beat well.
- Stir in enough remaining flour to make a soft dough.
- Cover and let rise until doubled in bulk, about 1 1/2 hours.
- Turn dough out onto lightly floured surface and knead until smooth and elastic.
- Roll dough out to 1/2-inch thickness; cut with a 2 1/2-inch cutter. Brush tops of rolls with melted butter.
- Place in a lightly greased baking pan and let rise in a warm place until doubled in bulk, about 45 minutes.
- Bake at 400u0b0 for 15 to 20 minutes or until done well.
- Yields about 3 dozen.
