Bean and Meat Chili
- 1 12 cups 13 bean soup mix
- 2 lbs beef (frozen is fine) or 2 lbs chicken (frozen is fine) or 2 lbs pork, roughly chopped (frozen is fine)
- 4 roma tomatoes, diced
- 2 green bell peppers, diced
- 1 onion, diced
- 3 garlic cloves, roughly chopped
- 2 tablespoons chili powder
- 1 tablespoon beef bouillon (better than bouillon brand)
- 14 cup flour (optional)
- Place beans in a bowl and cover with water, let soak overnight in the fridge.
- In the morning, combine all ingredients EXCEPT flour in a crockpot.
- Cover with water.
- Set on low for 8 hours or high for 6 hours.
- Mix flour with water and pour into the pot about an hour before done if you'd like a thicker chili.
- For gluten-free, please OMIT the thickening step.
