Meat-Ball Soup
- 1 lb ground beef
- 1 garlic clove, minced
- 2 sprigs parsley, chopped
- 14 teaspoon marjoram
- 14 teaspoon dried basil
- 14 teaspoon onion salt
- 1 12 teaspoons salt
- 1 dash pepper
- 1 egg
- flour
- 2 beef bouillon cubes
- 4 cups water
- 1 (15 ounce) can tomatoes
- 1 bay leaf, dried and crumbled
- 4 tablespoons uncooked rice
- Mix first 6 ingredients, 1/2 tsp salt, pepper and 1 egg.
- Shape into 32 tiny balls; dredge with flour.
- Bring bouillon cubes, water, tomatoes, 1 tsp salt and bay leaf to boil in a dutch oven.
- Add meatballs and rice, cover and simmer 45 minutes.
- Serve immediately.
- *You can also use beef broth instead of the bouillon cubs.
- You would need 4 cups of it.
