Low-Fat Oatmeal Raisin Muffins(Raisins And Apple Juice Sweeten These Muffins.)
- 1 c. uncooked regular oats
- 1/2 c. raisins
- 2/3 c. skim milk
- 1/3 c. frozen apple juice concentrate
- 1 c. all-purpose flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 large egg, beaten
- 1/4 c. vegetable oil
- In a large bowl, mix oats, raisins, milk and juice.
- Let stand 1 hour or refrigerate overnight.
- Line a 12 cup muffin pan with baking cups or use a nonstick muffin pan.
- Heat oven to 400u0b0.
- Mix flour, baking powder and salt.
- Stir egg and oil in oat mixture. Add flour mixture and quickly stir with a fork just until moistened.
- Mixture should be lumpy.
- Spoon into muffin cups and bake 15 to 20 minutes until golden brown.
- Serve warm or cold. Muffins can be frozen and reheated before serving.
- Makes 12 muffins.
- Per muffin:
- 1 1/2 bread, 1 fat.
