Pretzel Crusted Honey Mustard Chicken
- 1- 1/2 cup Mayonnaise
- 1/2 cups Honey
- 1/4 cups Dijon Mustard
- 4 whole Boneless, Skinless Chicken Breasts
- 1- 1/2 cup Crushed Pretzels
- For the honey mustard: Whisk together ingredients until completely combined.
- Set aside until ready to use.
- For the chicken: Preheat oven to 400 degrees F. Set an oven-safe cooling rack over a baking sheet and spray with nonstick cooking spray.
- One at a time, place the chicken breasts between 2 pieces of plastic wrap and pound (with a meat mallet) to 1/4-1/8 thickness.
- Set aside.
- Place crushed pretzels into a shallow pie plate.
- In another pie plate, place 1/2-2/3 cups of the honey mustard (reserving the rest for serving).
- Dunk the chicken breasts (one at a time) in the honey mustard and then into the crushed pretzels, being sure that you coat the chicken well.
- Place on prepared baking sheet and bake in the oven for 20-25 minutes, until the chicken is cooked completely and is no longer pink when cut into.
- Serve hot with a side of honey mustard.
