Pretzel Crusted Honey Mustard Chicken

  1. For the honey mustard: Whisk together ingredients until completely combined.
  2. Set aside until ready to use.
  3. For the chicken: Preheat oven to 400 degrees F. Set an oven-safe cooling rack over a baking sheet and spray with nonstick cooking spray.
  4. One at a time, place the chicken breasts between 2 pieces of plastic wrap and pound (with a meat mallet) to 1/4-1/8 thickness.
  5. Set aside.
  6. Place crushed pretzels into a shallow pie plate.
  7. In another pie plate, place 1/2-2/3 cups of the honey mustard (reserving the rest for serving).
  8. Dunk the chicken breasts (one at a time) in the honey mustard and then into the crushed pretzels, being sure that you coat the chicken well.
  9. Place on prepared baking sheet and bake in the oven for 20-25 minutes, until the chicken is cooked completely and is no longer pink when cut into.
  10. Serve hot with a side of honey mustard.
