Roasted Cauliflower Pizza
- Cornmeal for the baking sheet
- 1 lb. pizza dough
- 1/2 head cauliflower
- 1 small red onion
- 1/2 c. fresh flat-leaf parsley leaves
- 2 tbsp. olive oil
- 1/2 tsp. crushed red pepper flakes
- kosher salt
- 6 oz. Gruyere cheese
- Heat oven to 425 degrees F. Dust a baking sheet with cornmeal.
- Shape the dough into a 16-inch oval and place on the prepared baking sheet.
- In a large bowl, toss the cauliflower, onion, and parsley with the oil, red pepper, and 1/2 teaspoon salt.
- Fold in the cheese.
- Scatter the vegetable mixture over the dough.
- Bake until the cauliflower is tender and the crust is golden brown and crisp, 20 to 25 minutes.
