Creamy Quinoa Pudding
- 1 cup quinoa rinsed
- 2 1/2 cups edensoy soy milk
- 18 teaspoon sea salt
- 1 teaspoon tahini (sesame paste) sesame butter
- 2 tablespoons barley malt syrup or honey
- 2 tablespoons arrowroot flour or kudzu, dissolved in 2 tablespoons of cold water
- 1 tablespoon vanilla extract
- 1/2 teaspoon nutmeg grated, or ground cinnamon
- 1 x fruit to serve
- Put quinoa, soy milk and salt in a saucepan and bring to a boil.
- Cover and simmer for 20 minutes.
- Add sesame butter and barley malt syrup.
- Mix well.
- Add arrowroot flour or kudzu, stirring constantly until mixture thickens.
- Add vanilla and spices.
- Top with your choice of nuts or fruit.
