Barbecued Shrimp With Mango Lime Mayonnaise

  1. Skewer the shrimp and brush them with canola oil.
  2. Heat the barbecue.
  3. Mix together the mayonnaise, grated mango, lime juice and salt.
  4. Stir mixture well to combine.
  5. Set aside.
  6. Barbecue the shrimp until cooked -- about 1 minute on each side or slightly longer for larger shrimp.
  7. Serve shrimp immediately mayo and slice of lime.
  8. Note: you can use smaller shrimp with more per skewer.
