Vegetable Pita Melt

  1. In large pot, bring 2-quarts water to a rapid boil.
  2. Cut up broccoli and cauliflower into bite size pieces.
  3. Place cauliflower and broccoli into rapidly boiling water for 4 minutes.
  4. Drain in colander and let cool, then place in a large bowl and add 3 chopped green onions and 1 chopped tomato.
  5. Pour Ranch dressing over vegetables, enough to coat mixture.
  6. Chop the other tomato up and place on top of mixture for decoration.
  7. Chill for 2 hours. Cut pita bread in half; fill pitas up with vegetable salad.
  8. Top with shredded Cheddar cheese.
  9. May be microwaved to melt cheese on top.
