Vegetable Pita Melt
- 1 bunch fresh broccoli
- 1 bunch fresh cauliflower
- 3 green onions
- 2 medium tomatoes
- shredded Cheddar cheese
- pita bread
- Good Seasons Ranch dressing, made according to package directions
- In large pot, bring 2-quarts water to a rapid boil.
- Cut up broccoli and cauliflower into bite size pieces.
- Place cauliflower and broccoli into rapidly boiling water for 4 minutes.
- Drain in colander and let cool, then place in a large bowl and add 3 chopped green onions and 1 chopped tomato.
- Pour Ranch dressing over vegetables, enough to coat mixture.
- Chop the other tomato up and place on top of mixture for decoration.
- Chill for 2 hours. Cut pita bread in half; fill pitas up with vegetable salad.
- Top with shredded Cheddar cheese.
- May be microwaved to melt cheese on top.
