Red-Skin Potato Salad

  1. Place the diced potatoes in a large pot and cover with water.
  2. Boil the potatoes, uncovered, until tender, 12 to 15 minutes.
  3. Drain and transfer the potatoes to a mixing bowl.
  4. Add the remaining ingredients, and mix gently with a rubber spatula.
  5. Chill and serve.
  6. Stove
