Aubergine And Sesame Pate Recipe

  1. 1) Preheat the oven to 200c/400f/Gas 6.
  2. Bake the aubergine for 25-30 min till tender.
  3. Cold slightly , then peel and puree the flesh in a blender or possibly processor.
  4. 2.
  5. Add in the garlic, tahini and lemon juice and process till mixed.
  6. With the motor running, drizzle in the oil to make a smooth paste.
  7. Season to taste.
  8. Transfer to a serving dish, garnish and serve cool with pitta bread.
