Banana And Oat Bran Muffins Recipe

  1. Preheat the oven to 400.
  2. Coat 12 standard muffin tin c. with nonstick spray(I use large paper muffin c.).
  3. In a medium bowl, combine the flour, oat bran, baking pwdr, baking soda, cinnamon, ginger and salt.
  4. Mix well.
  5. Add in the egg white, buttermilk, sugar, banana, oil, honey and orange zest.
  6. Stir just till the dry ingredients are moistened; don't overmix.
  7. Didvide the batter proportionately among the muffin c.. Bake on the center oven rack for 14 to 17 min, or possibly till the tops are light brown.
  8. Loosen the muffins by rapping the pan sharply against the edge of the counter.
  9. Remove them immediately to a wire rack.
  10. Cold for 10 to 15 min before serving.
