Honey Teriyaki Glazed Salmon with Stir-Fry Veggies

  1. Doing all your prep ahead of time helps to speed up the process.
  2. Preheat your oven to 400 degrees F and spray a nonstick sheet pan with olive oil and place the salmon on the sheet pan.
  3. Mix together the oyster sauce, teriyaki sauce and honey in a small bowl and divide it in half.
  4. Glaze the salmon with on half of the glaze and place it in the preheated oven for 8-10 minutes.
  5. Heat a large skillet or wok over medium-high heat.
  6. Add in the sesame oil and another light oil (grapeseed or extra light olive oil).
  7. Add in garlic and ginger and stir for 1 minute.
  8. Add in the broccoli and the snow peas and cook for 3 minutes.
  9. Next add in the chopped baby bok choy and cook for a minute or two.
  10. Add in the reserved glaze and cook for 2 minutes more.
  11. Remove the salmon from the oven.
  12. Fill a bowl with rice, and top that with the veggies and glazed salmon.
  13. Enjoy!
