Linzer Keksz

  1. Preheat oven to 350F.
  2. Line a cookie sheet with parchment paper.
  3. Measure flour into a large bowl.
  4. Cut in margarine until the size of small peas.
  5. In a small bowl, beat together egg yolks and lemon zest.
  6. Add icing sugar and egg yolk mixture to the flour and margarine.
  7. Mix the dough together with a fork, then knead it in the bowl with your hands.
  8. The dough appears quite dry at first, but it will soon form into a nice soft dough.
  9. Divide dough in half and roll out one half on a lightly floured counter to 1/4 inch thick.
  10. Using the circle cookie cutters, you will need to cut out one solid circle, and one with a hole in the center for each cookie.
  11. Roll out the other half of the dough and continue to cut out a top and bottom section for each cookie.
  12. Bake all circles in a single layer for 10-15 minutes or until just slightly golden.
  13. Remove cookies onto a cooling rack.
  14. When cool, spread a thin layer of jam on solid bottom circles.
  15. Add a top circle (with a hole in the center) on top of the jam and sprinkle cookies with icing sugar.
