Apple Cinnamon Cake
- 1/3 cup brown sugar
- 1 tsp ground cinnamon
- 2/3 cup white sugar
- 1/2 cup butter softened
- 2 eggs
- 1 1/2 tsp vanilla extract
- 1 1/2 cup all purpose flour
- 1 3/4 tsp baking powder
- 1/2 cup milk
- 1 apple peeled and chopped
- Heat oven to 350.
- Grease and flour a 9x5 loaf pan.
- Mix brown sugar and cinnamon in a bowl and set aside.
- In another bowl beat white sugar and butter together with electric mixer until smooth.
- Beat in eggs and add vanilla extract.
- In another bowl combine flour and baking powder and then stir into butter mixture.
- Mix in milk until smooth.
- Pour half the batter into loaf pan.
- Next add half the apples and half the brown sugar and cinnamon mix into loaf pan.
- Gently pat down into the batter.
- Pour the remaining batter over the apple layer.
- Top with remaining apples and remaining brown sugar and cinnamon mix.
- Gently pat apples into the batter.
- Bake for 70-75 mins or until toothpick inserted into the center of the loaf comes out clean.
