Turlu
- 1 onion, cut in half and sliced
- 1/2 cup extra-virgin olive oil
- 2 medium waxy new potatoes, peeled and quartered
- 1 medium celeriac, peeled and cubed
- 1 large carrot, scraped and sliced
- 5 scallions, chopped
- 24 large cloves garlic, or more
- Salt and pepper
- 1 teaspoon sugar
- A 1-pound can white haricot beans, drained
- 3 tablespoons finely chopped parsley
- In a large pan, fry the onion in half the oil until golden.
- Add the other vegetables and the garlic, and barely cover with water.
- Add salt and pepper and the sugar and bring to the boil.
- Simmer until all the vegetables are well cooked and the liquid is reduced to a sauce.
- Add the beans and the remaining oil and cook a few minutes more.
- Serve hot, garnished with chopped parsley.
