Spicy Marinated Mushrooms
- 1 lb. fresh, firm, small mushrooms (button)
- 3/4 c. wine vinegar
- 1/4 c. water
- 1/2 c. olive oil
- 1 bay leaf, broken
- 1 tsp. fennel seed, crushed
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 2 large garlic cloves, minced
- 1/2 tsp. sugar
- 1 Tbsp. lemon juice
- 1 or 2 whole small Hawaiian red peppers (optional)
- parsley
- Wipe mushrooms clean.
- Combine all other ingredients except garlic and parsley.
- Boil for 5 minutes.
- Pour over mushrooms and add the garlic.
- Stir well to combine and coat.
- Place the marinating mushrooms in a container with tight lid.
- Chill for at least 12 hours, shaking or stirring if your lid isn't tight enough.
- The longer they marinate the better but serve within 4 to 6 days.
