Mexican Caesar Salad

  1. Sprinkle taco seasoning over chicken fillets to coat.
  2. Grill over medium heat until golden brown and cooked through.
  3. Rest for 5 minutes, then slice thinly.
  4. Place tortillas on a grill tray and sprinkle with cheese.
  5. Melt under a grill until golden brown.
  6. Combine lettuce, red capsicum, avocado, chicken and cheesy tortillas in a serving bowl.
  7. Drizzle with dressing and serve.
