Blue Potato Casserole

  1. Wash and peel potatoes.
  2. Place in 2 quart covered casserole.
  3. Add water; cover.
  4. Microwave on high 8 to 10 minutes.
  5. Drain; let cool.
  6. Dice potatoes.
  7. Combine soft Brie cheese, yogurt, eggs, salt and pepper in food processor bowl or blender container.
  8. Process until smooth.
  9. Pour over diced potatoes.
  10. Mix well; Put into a 1 quart souffle dish.
  11. Drizzle with melted butter, sprinkle crumbled cheese on top and put in a 350* oven for 20-30 minutes or until cheese is melted.
  12. Tip: Cream cheese can be substituted for soft Brie cheese and shredded Cheddar cheese for the crumbled Blue cheese for a diffent "cheesy casserole".
