Curry Chicken Salad
- 3 tablespoons curry powder
- 1 cup fat-free mayonnaise
- 14 cup chutney
- 1 teaspoon table salt
- 1 lb chicken breast, cooked, skinless, cubed
- 1 medium apple, cored and cubed
- 1 medium pear, cored and cubed
- 2 medium celery, stalks, diced
- 14 cup raisins
- In a small skillet over low heat, toast curry powder until fragrant.
- Combine curry powder, mayonnaise, chutney and salt in a small bowl.
- In a separate, large bowl, toss chicken, apple, pear, celery and raisins.
- Add mayonnaise mixture and combine.
