Holiday Orange Nut Bread

  1. Heat oven to 350F.
  2. Grease bottom only of 5 mini (5 3/4x3-inch) loaf pans.
  3. Set aside.
  4. Combine sugar and 1 cup butter in bowl.
  5. Beat at medium speed, scraping bowl often, until creamy.
  6. Add eggs; continue beating until well mixed.
  7. Add sour cream, orange juice and orange zest; continue beating until well mixed.
  8. Add flour, baking powder and baking soda; beat at low speed until well mixed.
  9. Gently stir in nuts.
  10. Divide batter evenly among prepared pans.
  11. Bake 35-45 minutes or until toothpick inserted in center comes out clean.
  12. Let cool 10 minutes; remove from pans.
  13. Cool completely.
  14. Combine 1/2 cup butter, powdered sugar and marmalade in bowl.
  15. Beat at medium speed, scraping bowl often, until creamy.
  16. Cover; refrigerate until serving time.
  17. Orange Walnut Poppy Seed Bread: Stir 2 tablespoons poppy seed into batter with walnuts.
  18. Orange Date Pecan Bread: Omit walnuts.
  19. Stir 2 cups chopped dates and 1 cup chopped pecans into batter.
  20. Orange Coconut Macadamia Nut Bread: Omit walnuts.
  21. Stir 1 cup sweetened flaked coconut and 2/3 cup coarsely chopped macadamia nuts into batter.
