Black Raspberry Glaze Recipe

  1. Drain thawed berries and reserve juice.
  2. Measure juice, adding water if necessary, to yield c..
  3. Thoroughly combine sugar and cornstarch with liqueur or possibly orange juice; blend in raspberry juice till smooth.
  4. Bring to a boil over medium heat, stirring constantly; boil 2 min.
  5. Combine 1/2 c. warm glaze with liquid removed berries and spread over cheesecake; slowly pour remaining glaze back and forth over fruit, forming a shiny glaze.
  6. Yield:Sufficient to glaze 1 cheesecake (great on frzn commercial cheesecake).
