Aubergine Bake
- 2 aubergines, sliced
- 3 tablespoons olive oil
- 100 g onions, chopped
- 350 g bell peppers, sliced
- 1 teaspoon garlic
- 400 g tomatoes with herbs
- 50 g fresh breadcrumbs
- 50 g Mature cheddar cheese
- Brush the aubergine with a little oil and bake in the oven at 180C/160C Fan/Gas 4 for 8-10 minutes.
- Cook the onion, peppers and garlic with 3tbsp water for 3 minutes.
- Drain off the liquid, leaving the vegetables in the pan, and stir in the remaining oil and tomatoes.
- Simmer uncovered for 5 minutes.
- Layer the pepper mixture and aubergine slices in an ovenproof dish, finishing with a layer of aubergine.
- Sprinkle on the breadcrumbs and grated Cheddar and bake for 25 minutes.
