Parmesan-Crusted Chicken
- 12 multi-grain saltine crackers
- 14 cup grated parmesan cheese
- 2 tablespoons finely chopped fresh parsley
- 12 teaspoon dried basil
- 14 teaspoon salt
- 14 teaspoon pepper
- 14 cup buttermilk
- 4 boneless skinless chicken breasts
- Heat oven to 400F.
- Place cracker in a large bag and crush w/a rolling pin.
- Add parmesan, parsley, basil, salt and pepper to bag and shake to combine.
- Pour crumbs into a shallow pie plate.
- Place buttermilk in a shallow plate.
- Dip chicken in the buttermilk, then coast both sides of chicken in cracker mixture.
- Place chicken on baking sheet and bake at 400F for 30 minutes.
