Shaved Yellow Squash with Arugula, Goat Cheese and Pecans
- 3 medium yellow squash, sliced lengthwise paper-thin on a mandoline
- 8 ounces baby arugula
- 2 ounces toasted pecans
- 1 tablespoon red wine vinegar
- 2 tablespoons olive oil
- 2 ounces goat cheese
- Kosher salt
- Black pepper
- In a large mixing bowl, toss the squash with the arugula, pecans, vinegar, oil, salt and black pepper.
- Top with crumbled goat cheese and serve.
