Quick Doughnut holes
- 2 eggs
- 1 teaspoon baking powder
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 (100 g) containers vanilla yogurt (I use fat-free)
- 3 cups canola oil
- 14 cup powdered sugar
- Heat the 3 cups of oil in a very deep frying pan or a pot.
- Mix flour, sugar and baking powder in a bowl.
- Add eggs and yogurt to the flour mixture and mix well.
- Place the dough into the hot oil by tablespoon measure (you can test the oil by dropping a small amount of dough and if the oil bubbles around it immediately, it is ready for frying).
- Fry the doughnuts on one side until golden-brown, then turn with a fork and fry on the other side.
- Remove the doughnuts onto a plate lined with a couple of paper towels to drain the excess oil off.
- Once cooled a little, dust with some powdered sugar and enjoy!
