Apricot Lentil Soup Recipe

  1. Lentil soup with a sweet-tangy twist.
  2. This is great with a hot piece of black bread slathered with creamy butter.
  3. 1 Saute/fry onion, garlic, and apricots in extra virgin olive oil.
  4. Add in lentils and stock.
  5. Bring to a boil, then reduce heat and simmer 30 min.
  6. 2 Add in tomatoes, cumin, thyme, and salt and pepper to taste, and simmer 10 min more.
  7. 3 Add in lemon juice.
  8. Puree 1/2 of the soup in a blender, then return to the pot.
  9. Serve.
  10. Makes 6 -8 servings
