Scalloped Potatoes And Ham Recipe
- 4 med. potatoes, cooked and peeled
- 1 sm. onion, minced
- 1 sm. green pepper, minced (optional)
- 3 teaspoon butter
- 2 teaspoon flour (level)
- 1 1/2 c. lowfat milk
- 6 ounce. cheddar cheese, shredded (1 1/2 c.)
- 8 ounce. cooked ham in 1/2 inch pcs
- Salt and pepper to taste
- 1/4 teaspoon dry mustard
- 1 c. potato chips, crushed
- Cook onion and pepper in butter till soft.
- Blend in flour, stirring constantly.
- Add in lowfat milk and seasonings and cold till smooth and thickened.
- Stir.
- Add in cheese and remove from fire.
- Slice potatoes 1/4 inch thick and put in 1 1/2 qt baking dish and cover with ham, then the sauce.
- Cover with finely crushed potato chips and bake at 350 degrees for about 30 min.
- Serves 6.
- 355 calories per serving.
