Sunshine Spice Cake

• 1 (18 ounce) box yellow cake mix
• 1 cup carrot, pureed
• 14 cup water
• 2 eggs
• 1 teaspoon mixed spice

1. Preheat oven to 180 degrees Celcius.
2. Coat a 9 inch square cake pan with cooking spray.
3. In a large mixing bowl combine all ingredients.
4. Beat until smooth.
5. Pour the batter into the cake pan and bake until a toothpick inserted comes out clean - about 25 minutes.
