Glazed Acorn Rings Recipe
- 2 acorn squash
- 1/2 c. orange juice
- 1/2 c. packed brown sugar
- 1/2 c. light corn syrup
- 1/4 c. butter
- 2 teaspoon grated lemon rind
- 1/8 teaspoon salt
- Cut off ends of squash.
- Slice clockwise into 1 inch rings.
- Remove seeds.
- Place in single layer in large shallow baking dish.
- Add in orange juice.
- Cover and bake at 350 degrees for 30 min.
- Combine sugar and all other ingredients.
- Simmer 5 min.
- Pour over squash rings and bake 15 min longer.
- Baste occasionally.
- Serves 6.
