Cashel Blue and Cider Ice

• 1 pint lemon sorbet, softened
• 34 cup irish cider
• 3 ounces cashel blue cheese, cubed

1. Spoon softened sorbet into a plastic container.
2. Stir in cider and blue cheese, then refreeze until ready to serve.
